Mix together butter, sugars, baking powder, egg, vanilla and salt.
Add flour and mix slowly. When the mixture comes together, turn mixture out onto a floured board and knead lightly.
Divide mixture into 4 even parts, and tint with food colours, kneading gently until colour combines into dough.
Press the mixture into 5mm tall x 5cm wide rectangles, and stack them on top of each other. Refrigerate for 2 hours until firm.
Preheat oven to 180°C (fan forced). Line trays with baking paper.
Cut the dough into 5mm slices and lay flat on prepared trays. Bake for 8-10 minutes, removing from oven just before cookies brown. Cool on trays.
