Not only are these as sunny and fun as an actual rainbow, they are easy to bring into your kitchen, even on the most miserable of rainy days. Who doesn’t love eating a rainbow?

  1. 250g butter
  2. 1 cup + 1 tbsp (125g) caster sugar
  3. 2/3 cup (105g) brown sugar
  4. 1 1/2 tsp baking powder
  5. 1 large egg
  6. 2 tsp Queen Organic Vanilla Bean Paste
  7. 1/2 tsp salt
  8. 2 2/3 cup (400g) plain flour
  9. Queen Gel Food Colours (blue, red, green, yellow)


  1. Step 1

    Mix together butter, sugars, baking powder, egg, vanilla and salt.

  2. Step 2

    Add flour and mix slowly. When the mixture comes together, turn mixture out onto a floured board and knead lightly.

  3. Step 3

    Divide mixture into 4 even parts, and tint with food colours, kneading gently until colour combines into dough.

  4. Step 4

    Press the mixture into 5mm tall x 5cm wide rectangles, and stack them on top of each other. Refrigerate for 2 hours until firm.

  5. Step 5

    Preheat oven to 180°C (fan forced). Line trays with baking paper.

  6. Step 6

    Cut the dough into 5mm slices and lay flat on prepared trays. Bake for 8-10 minutes, removing from oven just before cookies brown. Cool on trays.
