The Best Desserts for an Australia Day BBQ

Did you know Queen Vanilla is made right here in Brisbane? We’re very proud of our heritage, which means bringing a show-stopping desert to our annual Australia Day barbeque is an absolute must! With a hint of nostalgia, a dash of vanilla and a whole lot of iconic flavours, read on for our top picks for this year’s long weekend.

1. Lamington Layer Cake

Sometimes bigger is better, and this giant lamington cake is all the proof you need! If you have a busy Australia Day long weekend planned, get started on this dessert in advance by baking and freezing your layers. Just be sure to wrap the cakes extra tightly in cling wrap and foil to prevent any pesky freezer burn. Check out our Storage and Prepping Ahead blog post for more tips.

2. Wagon Wheel Cheesecake

After dreaming about cheesecake with a fluffy marshmallow texture, our friend Amanda from Chewtown conjured up this fabulous Wagon Wheel dessert mashup. We are big fans of no-bake recipes during the summer months, and this nostalgic dessert ticks all the boxes.

3. Raspberry White Chocolate Peach Melba Trifle

Did you know that the original Peach Melba was created in honour of the Australian opera singer, Dame Nellie Melba? Traditionally made up of peaches, raspberry sauce and vanilla ice cream, we’ve taken all those flavours and turned it into a modern masterpiece! Big bowls of trifle are easy to transport, making this the perfect prep ahead dessert for any park-based BBQ events.

4. Iced Vovo Cupcakes

These sweet little cupcakes celebrate the nostalgic raspberry and coconut flavour combination of the iconic Iced Vovo biscuit. While this iconic treat is wonderful all year round, Australia Day is the perfect occasion for this Aussie favourite to shine. Even if you aren’t an Iced Vovo connoisseur, we guarantee that you will LOVE these cupcakes.

5. Deep Dish Vanilla Custard Tart

Custard tarts are an Aussie classic and for vanilla-lovers like us, creating a deep dish version was a no-brainer! While the tender vanilla almond pastry makes it extra special, good quality store bought pastry works just fine. Here at Queen, we are big fans of Carême’s handmade selection.

6. Tim Tam Tiramisu

This simple show-stopper is an absolute hit with our Queen bakers over Christmas, and we have no doubt it will be the talk of the town this Australia Day too! This dessert combines two delicious classics; Tiramisu and the iconic Tim Tam Slam to make one incredible dessert. The best part? You can make it a day or two before the big event!

7. Mini Milo Pavlovas with Lamington Balls

If the thought of transporting a whole pavlova to your BBQ is altogether too stressful, these mini treats are the perfect alternative. Make your milo meringues and lamington balls a few days ahead and store in an airtight container, then whip up your cream on the day of the event. Bring everything along to the park and assemble then and there with an icy cold drink in hand!

8. Fruit Tingle Layer Cake

This beautiful cake combines all our favourite summer fruit flavours in one! Layer them up with a crushed Fruit Tingle sherbet buttercream for an impressive celebration dessert this Australia Day.

9. Pavlova Cupcakes

The divine combination of meringue, fresh whipped cream and berries need not be limited to special occasions – these Pavlova cupcakes are the perfect way to enjoy this fruity summer treat all year round! Prep everything in advance and assemble before serving to you willing guests this Australia Day.

10. Easy Microwave Freckle Fudge

So… you left it too late to plan dessert. Don’t panic! Everyone loves chocolate freckles, and they taste even better in fudge form. This recipe takes just 8 minutes in the microwave, and can set in the fridge while the snags are cooking.
