Ingredients

Cupcakes

  1. 100g unsalted butter, softened

  2. 185g caster sugar

  3. 2 tsp Queen Organic Vanilla Essence

  4. 2 large eggs

  5. 1 1/3 cup (200g) self-raising flour, sifted

  6. 1/2 cup (125ml) milk

Buttercream

  1. 250g unsalted butter, softened

  2. 3 cups (450g) icing sugar mixture, sifted

  3. 2 tsp Queen Vanilla Bean Paste

  4. Queen Teal Food Colour Gel

  5. Queen Midnight Magic Sprinkles

Method - Cupcakes

    Preheat oven to 160°C (fan forced). Line two 12 hole cupcake tins with cases and set them aside.

    In the bowl of a stand mixer or using a hand mixer, cream butter, sugar and Vanilla Essence until light and fluffy. Add eggs one at a time, mixing to incorporate.

    Add sifted flour and milk in two batches, mixing until just combined. Add ¼ cup of batter to each case then bake for 15-20 minutes or until cupcake bounces back when pressed lightly. Allow to cool in tin for 5 minutes before transferring to a wire rack to cool completely.

Method - Buttercream

    In the bowl of a stand mixer or using a hand mixer, combine butter, icing sugar and Vanilla Bean Paste. Mix on low to incorporate, then beat on high until light and fluffy (about 5 minutes). Add teal gel food colour to desired intensity.

    Place into piping bag fitted with an open star tip. Pipe onto cupcakes and sprinkle with Midnight Magic Sprinkles.

Amazing and so easy to make, glad I didn’t have to use any elitric wish, I added some orange zest because it’s one of my favourite fruits, it won’t alter the result will it??

I love this recipe but a few people I’ve made them for say they are dry. Could I add a bit of canola oil or something?

Hi there, you absolutely can! just be careful how much, you don’t want to add too much liquid and ruin the batter!

Omg these cupcakes are amazing, the cupcakes are easy to make, you don’t need that much equipment, and when I tried the cupcake it was so fluffy and delicious. 100/10 will be using this recipe again 👍

These cakes were very sticky. Could they be made with only one egg? Could I reduce the sugar?

Hi Ann, while we’re not too sure what you mean by sticky – but this doesn’t sound quite right. We’ve always had great success and this recipe is the base for a few of our most popular cupcake recipes. The key is ensuring that you mix the butter & sugar until light and fluffy and that you don’t over mix the batter once you add the flour as this can result in a denser cupcake. I would not alter the recipe as this may affect the final result. Hope that helps!
