Kick back and relax this weekend with a hot cup of tea and one of these delightful cornflake biscuits – they only take 15 minutes to bake!

  1. 125g unsalted butter
  2. 1/3 cup (75g) caster sugar
  3. 1 large egg
  4. 1/2 tsp Queen Natural Lemon Extract
  5. 1 tsp Queen Natural Vanilla Extract
  6. 2/3 cup (105g) sultanas or mixed fruit
  7. 1 cup (150g) self-raising flour
  8. 2 cups lightly crushed cornflakes


  1. Step 1

    Preheat oven to 160C (fan forced)

  2. Step 2

    Cream butter and sugar until light and fluffy. Add Lemon Extract, Vanilla and egg and beat well. Fold in sifted flour and fruit and mix well.

  3. Step 3

    Drop teaspoonfuls of mixture into cornflakes, roll lightly and place on lightly greased oven tray allowing room for biscuits to spread. Bake in moderate oven 15 minutes.
