Ingredients

  1. 200g chocolate brownies, cut in pieces (or dense chocolate cake)

  2. 4 scoops chocolate ice cream

  3. Queen Hard Set Choc Topping

CHERRY COMPOTE

  1. 300g frozen cherries, pitted (or fresh cherries if in season)

  2. 2 tbsp water (3 tbsp if using fresh cherries)

  3. 1/2 tbsp cornflour

  4. 1/2 tbsp lemon juice

  5. 1 tbsp sugar

Method

    To make the cherry compote, place water in a small saucepan off the heat. Whisk in cornstarch, lemon juice and sugar and place over a medium heat until the mixture starts to thicken.

    Add the cherries and cook simmering for about 8-10 minutes until the mixture is thickened and bubbling in the middle (the compote will also thicken as it cools). Remove from heat and set aside until completely cool. This step can be done a few days prior and kept in a jar in the fridge.

    In two large sundae glasses begin layering your sundaes as follows. Spoon 1 tbsp cheery compote in the bottom of each glass, top with a few pieces of choc brownie and top with a scoop of choc ice cream. Repeat with the compote and brownie pieces then top each glass with a large scoop of ice cream. Drizzle over Queen Hard Set Choc Topping and allow it to set.
