Tools & Ingredients
- Pre-prepared and completely cool chocolate cupcakes
- Ready to Roll Icing in brown, pink and white (or any bright colour you please!)
- Black Food Colour
- A small paintbrush
- Small sharp scissors
- Circle cutters
- Cornflour or icing sugar
- A rolling pin
Method
STEP 1
Create a lighter shade of brown icing by first preparing dark brown fondant, then kneading white fondant into brown until even in colour.
STEP 2
Roll out until approx 3mm thick and cut to circles using circle cutter and apply to cupcake, using a little sugar syrup, jam or frosting to assist with sticking.
STEP 3
Repeat rolling and cutting with darker brown colour, and partially cut the circles again to create the hedgehog ‘back’. Brush water onto icing and place sticky-side down onto lighter icing on cupcake.
STEP 4
Take scissors and gently cut spikes in three rows at a 45 degree angle.
STEP 5
Use paintbrush and black food colour to create eyes
STEP 6
Roll a nose for the hedgehog using the darker brown fondant, creating a little square. Attach to cupcake by wetting fondant with water and a paintbrush.
STEP 7
For hedgehog-ettes, create a bow using pink or white fondant. Simply shape two small pieces into cones and attach to cupcake, then finish with a small ball in the middle.
