This easy to make cake has been made in my family for generations. Because it is simple to make it is the first cake the children in our family are taught to make. It has been made with addaptations to cater for lactose intorlance using Nuttalex and soy milk, still yummy. I have also cooked it in the microwave repacing the butter with oil, very light and fluffy not to mention quick!
The Queen ingredient is of course the vanilla. Originally back in the ‘old days’ we used essence, then moved on to extract and now I just love the Queen vanilla bean paste.
