Oreo Cupcakes - Shannon .

Chocolate Vanilla Cupcakes are delicious, but these ones are extra special thanks to an Oreo biscuit hiding inside!


  1. Step 1

    Preheat oven to 180C and grease a 12 cup muffin tray. Split Oreos in half and place half in each cupcake case, cream side up. Combine flour, cocoa powder, baking powder, salt in a large bowl, mix well and set aside.

  2. Step 2

    Beat sugar and butter until light and fluffy. Combine milk, eggs and vanilla paste in a bowl, mix well then gradually add to butter mixture, then add flour to mixture and mix until just combined with no lumps.

  3. Step 3

    Divide mixture evenly between cupcake cases and bake for 25-30 minutes until an inserted skewer comes out clean. Allow to cool fully before icing.

  4. Step 4

    Prepare icing by combining butter and icing sugar in a mixer until smooth, approx 4-5 minutes. Add vanilla and a dash of milk to adjust consistency. Mix until smooth and transfer to a piping bag with a star tip. Pipe icing onto cupcakes and finish with oreo crumble before serving.
