We baked this three tier naked cake for my brother and new sister-in-law’s wedding. My brother founded and directs 300 Blankets, a charity for the homeless, and the two of them together do so much for the community. We wanted to do something special for their big day and give them a gift that they’ll always cherish and remember.
The three tiers on the cake were three different flavours – the top tier was a citrus mud cake with white chocolate ganache, middle tier was a caramel mud cake with salted caramel buttercream, and the bottom tier was a white chocolate mud cake with raspberry white chocolate ganache. All three cakes were flavoured with Queen’s vanilla extract, and to keep the naked cakes moist and delicious, the naked cake was lightly iced with Swiss meringue buttercream, made fragrant with Queen’s vanilla bean paste.
We decorated the cake with fresh flowers to match the gorgeous blooms that the newlyweds chose to decorate their venue, and fresh hand selected fruit. We cut up the plumpest figs, and placed each blueberry, raspberry, green apricot and baby plum on the cake with so much love.
