This cake was for my Dad’s 60th birthday – it is the perfect gift for any crossword lover and is easy to recreate!
Place one sponge cake on a cake stand or serving plate and top with a layer of buttercream icing. Add the second cake on top and cover the entire cake with remaining buttercream icing. Place in fridge to cool slightly.
Knead fondant icing until smooth, then roll out until 1cm thick. Use cornflour if icing is sticky. Gently lift icing and place over entire cake, smooth to fit and trim the edges. Allow to dry while making the crossword letters.
To made the crossword, knead leftover white icing and black icing, then roll out to 1/2 cm thickness. Use a small square cutter to cut out the shapes and left them to dry. Once dry use black writing icing to add the letters to the white squares. Make the pen by rolling out red icing and use black icing to make the trim. Once dry attach all the squares to the cake using a little bit of water and place a strip of black around the base for a bit of extra detail.
