This warm salad is much lighter than a traditional, creamy potato salad. Perfect for the summer months.

  1. 1kg potatoes
  2. 1 cup (250ml) fresh lemon juice (approx 5-6 lemons)
  3. 1/2 cup (125ml) olive oil
  4. 3 tsp chopped parsley
  5. 1 tsp Queen Natural Peppermint Essence
  6. 3-4 red shallots, sliced finely
  7. Salt and pepper to taste


  1. Step 1

    Boil potatoes until just tender, then peel and cube them. Combine olive oil, lemon juice, parsley, peppermint essence and shallots in a small bowl.

  2. Step 2

    Pour lemon peppermint mixture over potatoes while they are still warm, season with salt and pepper to taste and mix gently until dressing is evenly distributed. Serve immediately.
