Ingredients
- 1kg potatoes
- 1 cup (250ml) fresh lemon juice (approx 5-6 lemons)
- 1/2 cup (125ml) olive oil
- 3 tsp chopped parsley
- 1 tsp Queen Natural Peppermint Essence
- 3-4 red shallots, sliced finely
- Salt and pepper to taste
Method

Step 1
Boil potatoes until just tender, then peel and cube them. Combine olive oil, lemon juice, parsley, peppermint essence and shallots in a small bowl.

Step 2
Pour lemon peppermint mixture over potatoes while they are still warm, season with salt and pepper to taste and mix gently until dressing is evenly distributed. Serve immediately.
