This is sweet and salty taken to the highest level! The creamy, slightly salty brie works brilliantly with the smooth, sweet toffee – try this at the start of your next BBQ. You may need to make a double batch as it will vanish quickly.

  1. 250g double brie mini wheel cheese
  2. 1/2 cup (110g) caster sugar
  3. 2tsp Queen Pure Maple Syrup
  4. 1/2 tsp Queen Vanilla Bean Paste
  5. 1tsp good quality berry or orange jam
  6. 2/3 cup (105g)dried cranberries, rehydrated in 1 cup warm water
  7. Crackers and bread, to serve
  8. Thyme sprigs, to serve


  1. Step 1

    Preheat oven to 180C (fan forced). Remove brie from packaging and place on a oven tray lined with baking paper. Score surface of brie in a cross pattern.

  2. Step 2

    Combine jam, maple syrup and Vanilla Bean Paste into a small non stick saucepan over a medium low heat until melted. Add drained cranberries and simmer on low heat until berries are softened and sauce is sticky. Set aside

  3. Step 3

    When ready to serve, place brie in oven and bake for 5-7 minutes until soft but not oozing. Serve with sauce and fresh thyme immediately.
