Ingredients
- 250g double brie mini wheel cheese
- 1/2 cup (110g) caster sugar
- 2tsp Queen Pure Maple Syrup
- 1/2 tsp Queen Vanilla Bean Paste
- 1tsp good quality berry or orange jam
- 2/3 cup (105g)dried cranberries, rehydrated in 1 cup warm water
- Crackers and bread, to serve
- Thyme sprigs, to serve

Step 1
Preheat oven to 180C (fan forced). Remove brie from packaging and place on a oven tray lined with baking paper. Score surface of brie in a cross pattern.

Combine jam, maple syrup and Vanilla Bean Paste into a small non stick saucepan over a medium low heat until melted. Add drained cranberries and simmer on low heat until berries are softened and sauce is sticky. Set aside

Step 3
When ready to serve, place brie in oven and bake for 5-7 minutes until soft but not oozing. Serve with sauce and fresh thyme immediately.
