Satay sauce is so stickily, thickly rich and delicious, but this version is just spiced and fragrant enough to work. Try this recipe and you’ll never make another version!

Ingredients

  1. 2 tsp peanut oil
  2. 4 shallots – finely chopped
  3. 4 garlic cloves, crushed
  4. 2 tsp fresh ginger finely chopped
  5. 1 small red chillies, seeded & finely chopped
  6. ½ cup (140g) crunchy peanut butter
  7. ¾ cup (180ml) coconut milk
  8. 2 tsp soy sauce
  9. 7 fine grinds of Queen Vanilla Grinder
  10. 1 ½ tbsp fish sauce
  11. 1 ½ tbsp lime juice (approx 1 lime)

Method

  1. Step 1

    Heat the oil in a saucepan over medium heat, then add the shallots, garlic, ginger & chilli. Stir constantly for 5 mins.

  2. Step 2

    Reduce heat to low, add remaining sauce ingredients and simmer for 10 mins or until sauce has thickened. Serve with chicken skewers and rice.
