Weekender Cornflake Biscuits

Kick back and relax this weekend with a hot cup of tea and one of these delightful cornflake biscuits – they only take 15 minutes to bake!

Ingredients

  1. 125g unsalted butter
  2. 1/3 cup caster sugar
  3. 1 egg
  4. 1/2 tsp Queen Natural Lemon Extract
  5. 2/3 cup sultanas or mixed fruit
  6. 1 cup self-raising flour
  7. 2 cups lightly crushed cornflakes

Method

  1. Step 1

    Cream butter and sugar until light and fluffy. Add Queen Lemon Essence and egg and beat well. Fold in sifted flour and fruit and mix well.

  2. Step 2

    Drop teaspoonfuls of mixture into cornflakes, roll lightly and place on lightly greased oven tray allowing room for biscuits to spread. Bake in moderate oven 15 minutes.
