Gluten Free Hazelnut Cookies

These gluten free hazelnut cookies are so easy to put together, just a few ingredients, a bowl, a spoon, and 10 minutes in the oven! They smell wonderful fresh out of the oven.

Ingredients

  1. 130g hazelnut meal
  2. 2 1/2 tbsp melted coconut oil
  3. 2 tbsp Queen Pure Maple Syrup
  4. 1 tsp Queen Natural Vanilla Extract
  5. pinch of salt
  6. 1/4 tsp baking powder

Method

  1. Step 1

    Pre-heat the oven to 170C fan-forced and line a tray with baking paper.

  2. Step 2

    In a large bowl, stir all the ingredients together. Make sure that everything is at room temperature first so the coconut oil doesn’t solidify.

  3. Step 3

    Use a heaped teaspoon of dough and roll it into a ball then flatten slightly and place on the tray. Repeat with the remaining dough.

  4. Step 4

    Bake for 10-12 minutes. Transfer to a wire rack to cool.
