Hot Baking and Decorating Trends: 2015

Decorated Biscuits

The humble sugar cookie has knocked the cupcake off its perch when it comes to the hottest decorated treat right now. We’re seeing a resurgence in biscuits decorated with Royal Icing in fun shapes and modern designs, plus plenty of biscuits adorned with 2D fondant shapes. Here’s a few of our favourites:

Meringues

Just like decorated biscuits, meringues have been pulled out of the 80’s recipe books and modernised for a new generation of bridal showers, baby showers, birthdays and cake adornments. The new meringue is a glossy, peak-tipped confection with vibrant or pastel colours achieved with a piping bag and food colour gels.

Drizzle for days

Drizzle fo’ shizzle! Snoop dog knew it before we did – the drizzle is back. Think luscious gooey caramel trickling down our salted caramel popcorn cake or hot chocolate ganache running down our hot chocolate with Marshmallows cake. The drizzle is an easy way to finish a cake, add instant ‘drool’ factor and for birthday cakes, add an extra layer of colour contrast. Here are some of our favourites:

Fabulous fillings

One upon a time, the idea of ‘excitement with every bite’ was limited to the delicious world of ice cream. This year we’re seeing cupcakes take on this idea with gooey fillings baked inside or filled after baking, then iced as normal. We love this trend as it opens up new flavour combinations such as our Fudge Filled Tiramisu cupcakes, and also removes the question of ‘which do you prefer – the cake or the icing’. Gravity-defying

This last big trend is not for the faint-hearted! Gravity-defying cakes are popping up everywhere in professional cake decorating circles and we’re seeing this concept (albeit an easier version) trickle down to home baking as well. The secret is a little wire and a lot of fondant. Here’s some stunning creations to inspire you:
